“Traditionally, the world of vines and wine is characterized by an apparent permanence, a continuity regulated by a smooth history, the fruit of age-old know-how transmitted from one generation to the next. However, behind this facade, hides an eventful history. Thus, this work, which brings together the contributions of around twenty international specialists, suggests to look back on three centuries, decisive and still little explored, of identification, construction and regulation of territories of the vine and wine. Through the prism of a multidisciplinary perspective, this collection shows how, from the 18th to the 21st century, different actors were able to describe, regulate and organize wine-growing territories as different as those of Burgundy, Champagne, and New-Zealand, Chile or even Rioja.
Placing man at the heart of this historical and social construction which, in the 20th century, will establish the very idea of terroir among the oenophile, this work invites more broadly to take a different look at contemporary societies and their past.”
